    Chargrilled vegetables with BiGG Chilli Tomato

    INGREDIENTS

    BiGG Chilli Tomato Seasoning
    ½ bunch spring onion
    ½ butternut pumpkin
    1 large eggplant
    1 radish, for garnish

    Lemon Dressing
    45ml olive oil
    15ml lemon juice
    Salt, pepper to taste

    METHOD

    1. Slice pumpkin, eggplant and spring onion into medium sized pieces.

    2. Grill vegetables over high heat for 4-5 minutes until nicely grilled + cooked through

    3. Thinly slice radish and place into iced water.

    4. While still hot, place grilled vegetables in a bowl and lightly drizzle with combined lemon dressing ingredients.

    5. Arrange vegetables on the plate, garnishing with fresh radish and a generous sprinkle of BiGG Chilli Tomato.
