    Satay beef skewers with BiGG Coconut Satay

    BiGG Coconut Satay Beef skewers

    INGREDIENTS

    BiGG Coconut Satay Seasoning
    250g scotch fillet

    Marinade
    2 garlic cloves
    ½ tsp grated ginger
    ¼ tsp cumin powder
    ¼ tsp turmeric powder
    ¼ tsp coriander powder
    1 tsp fish sauce
    ½ tsp lemongrass paste
    10ml cooking oil

    METHOD

    1. Soak bamboo skewers in water for 15 minutes

    2. Combine all of the marinade ingredients together into a blender and process until smooth.

    3. Slice scotch fillet into long strips and combine with marinate for at least an hour.

    4. Thread marinated beef onto skewers and grill for 6-8 minutes until lightly charred, rest for 2-3 minutes.

    5. Plate up your Satay skewers and throw heaps of BiGG Coconut Satay Seasoning on top.
