    Pork Stirfry with vegetables and rice

    Ingredients:

    BiGG Coconut Satay

    1 red capsicum - diced
    1 Lime
    4 Shallots - diced
    100g green beans - chopped
    1 Bunch Basil - chopped
    600g Chicken thigh mince
    4 garlic cloves
    knob of ginger

    For the sauce:
    2 tsp corn flour (Make a slurry)
    150ml water
    2 tsp sugar
    2 tsp oyster sauce
    2 tsp dark soy

    Method:

    1. Sautee Red capsicum, shallots, and green beans until tender, and set aside.
    2. In the same pan sauté mince until browned, add garlic and ginger and cook for a further minute.
    3. Add the cooked veg back in the pan, pour in the sauce and cook for a further minute until thickened and mix in the chopped basil.
    4. Top with BiGG Coconut Satay for a Thai explosion.
