Spanish eggs with BiGG Chilli Tomato

Ingredients:

1/2 Red Capsicum - diced
1/2 Yellow Capsicum - diced
1 small red onion -diced
1 tsp ground cumin (toasted)
1 Chorizo (chopped up)
Chopped coriander for garnish
1 egg
3 cloves garlic
A mixture of tomatoes

Method:

1. Peel and blend 3 large tomatoes into a saucepan and reduce half, lightly season and set aside.
   
   
2. In a frypan add your onion and capsicums until soft, then add your chorizo, garlic and cumin and cook for a further 3 minutes.
   
3. Pour in your reduced tomato puree and simmer for 2 minutes.
   
4. To plate up spoon mixture onto toast and top with a fried egg and BiGG Chilli Tomato!
